This week we veer a little from the bees and look at zucchini. It appears I've planted far more zucchini than I know what to do with right now. I've cooked a fair amount of zucchini in my time but have always kept it simple. So as with everything I've been researching and looking at different options and as I do I've come across some fun to me facts.
Zucchini is actually a fruit though most believe it to be a vegetable.
A zucchini has more potassium than a banana
The squash blossom is edible and considered a delicacy in some areas.
Size does matter! Smaller to medium is better
The darker the skin the more nutrients that are inside.
The largest zucchini on record 69 1/2 inches long and weighted 65 pounds!!!!!
